From a Small Kitchen in Lisbon to Your Table in Marden
I'm Maria Conceição Correia, and I've been making rissóis, croquetes and pastéis de bacalhau for as long as I can remember. Growing up in Lisbon, I learned these recipes at my mother's side — watching her fold pastry with weathered hands, season the fillings by instinct, and fry each batch until perfectly golden.
When our family moved to Kent, these recipes came with us. They weren't just food — they were home. At first, I only cooked for family and neighbours. Then friends at the tennis club. Then the village hall. People kept asking, "Can I order a tray for my party?"
And that's how Lisboa Bites was born — not from a business plan, but from a mother's kitchen and the joy of sharing a taste of home.
Still Made the Same Way
We don't rush the process. The fillings are cooked slowly — beef simmered until tender, shrimp folded into rich béchamel, salt cod flaked by hand. The pastry is rolled and shaped just like my mother taught me.
Every rissol is crimped by hand. Every croquete is rolled with care. Every pastel is fried until just golden — the same method my family has used for three generations.
